The Igbo tribe in Nigeria have a lot of very fantastic, unique and interesting traditional Igbo food recipes.

All the dishes from this tribe are very delicious and healthy for human consumptions.

Their meals are always bold and filled with all a lot of varieties, they mostly contain vegetables.

The ingredient for many of Igbo Food recipes can be sourced both locally and abroad.

For those abroad, some of the ingredients can be sourced from local African stores.

They are alternatives that you can use to replace them and you will still achieve the same unique tastes.

The first of the Igbo Food Recipes is:

Ukwa (Breadfruit Porridge)

This meal is sumptuous and yummy. It has a natural taste and requires very few seasonings.

However, you can customize to your taste. The process of making it is very easy and does not require much stress.

Ingredients

African breadfruits – 800 gms (4 cups)

Smoked catfish – 2 large (dry fish can also be used)

Blended craysfish – 1tsp

Stock cube – 2

Scotch bonnet – 2

Palm oil – according to your preference

Edible potash – 7gm

Salt to taste

Ugwu (pumpkin leaves) or any vegetable of your choice

Igbo Food Recipes: Preparation of Ukwa (Breadfruit Porridge)

Soak breadfruits overnight to make it soft

Rinse thoroughly to remove stones and any other dirt.

Wash your pepper and chop or roughly blend and set aside.

Soak the fish in hot water for few minutes, wash and clean very well to remove dirt. Debone and set aside in a bowl

Pour inside a big pot and add water to it. Make sure the water is above the breadfruits.

Add the fish, crayfish, pepper, stock cube, palm oil, potash and salts to taste.

Cover the pots and allow it cook for 50 minutes or more if you desire.

Another thing is, you can add hot water if you want a lighter consistency

Achicha Ede (cocoyam porridge)

This is a very rare and special traditional meal amongst the Igbo-speaking tribe of Nigeria.

It is unique and I think it’s a meal you will enjoy if you try it.

Ingredients

Achicha ede – 2 cups (Cocoyam flakes)

Scotch bonnets – 2

Crayfish – 3 tsp

Red onions – 3 medium ones

Palm oil – 1 cup

Ukpaka – ½ cup (shredded oil bean)

Stock cube – 1

Salts to taste

Igbo Food Recipes: Preparation of Achicha Ede (cocoyam porridge)

Wash and rinse the achicha ede very in cold water.

Transfer into a bowl wide enough to contain it.

Pour water to cover and allow soak it overnight.

(This is to soften the flakes and make it easier for the cooking).

Wash and chop your pepper. Set aside.

Wash the onions. Chop and set aside.

Wash your ukpaka and set aside.

Once it is soft, crush and break into smaller pieces.

Pour the crushed flakes into an aluminium foil or banana leaves, fold all the edges together properly so the content does not spill out.

Pour water into a pot, transfer it into the pots.

Cover and allow it to boil for 40 minutes. Remove and set aside.

Place pot on the fire, pour palm oil and allow it to heat up for few seconds.

Add your onions, crayfish, pepper and ukpaka, stock cube and salts to taste.

Stir and allow it fry for few minutes.

Add your achicha ede and stir together to combine all ingredients.

Add your pumpkin leaves and stir together.

Stir and allow it to cook for few minutes on a low heat.
