Ingredients

Okro – 4

Smoked mackerel

Dry fish

Stockfish

Goat Meat

Blended crayfish – 3 Tsp

Scotch bonnet – 2

Cameroon pepper – 1 tsp

Onions – 1 big

Stock cube – 1

Locust beans (locally called Iru)

Palm oil – 2 cooking spoon

Pumpkin leaf – (or any vegetable)

Wash your goat meat very well. Add some seasoning to your preference.

Boil your goats and set aside.

Wash your stock fish thoroughly. Boil it until it’s soft. Debone and set aside.

Clean and debone the smoked mackerel

Wash your dry fish. Pour hot water into it to soften it. Debone and set aside

Wash your okro. Chop or blend or grate it into very tiny pieces. Place in a bowl and set aside.

Wash and chop your onions, peppers. Set aside in a bowl

Place pot on the fire. Pour oil and add onions. Let it fry for few seconds on a low medium heat.

Add your locust beans, crayfish, and chopped pepper. Stir and allow it fry for few minutes.

Add Cameroon pepper, smoked mackerel, goat meat, kpomo (cow skin), chopped onions and stock cube. Stir together to combine.

Allow it cook for 5 minutes or more.

Pour your chopped okro, stir to combine and allow it to cook for a few minutes.

Add your pumpkin leaves and reduce heats.

Allow it simmer and yes, your soup is ready. This is how to create Okro Soup.

Ingredients

Okro – 4

Beef

Cowskin (kpomo)

Scotch bonnet – 1

Yellow pepper – 1

Onions – 1

Stockfish

Smoked mackerel

Crayfish – 3 tsp

Locust beans

Stock cube – 1 small

Palm oil – 2 cooking spoon

Beef stock

How to prepare Okro Soup

Wash and boil your kpomo and beef. Season according to your preference (boil your kpomo like 10 minutes earlier than beef). Set aside.

Wash and chop your peppers. Set aside

Wash and boil your stock fish till soft. Debone and set aside.

Clean your mackerel and debone. Set aside

Place pot on fire on a medium heat.

Pour the beef, cow skin stockfish, smoked mackerel, chopped pepper, locusts beans, palm oil, crayfish, chicken stock.

Check the taste before you add the stock cube. Stir together and allow it to cook for 10 minutes.

Add the okro to it. Stir to combine everything together.

Allow it to cook for a few minutes.

You can add vegetables if you wish.

Just allow it simmer once you do.
